South Yarra focacceria opened in 2023 by Sara Pestarino (Genoa) and Riccardo Guglietti (Rome), named after Sara's nonna Zita in Genoa. Genovese-style focaccia by the slice — including daily La Genovese and olive or squacquerone variants — sits alongside Roman-style filled sandwiches on 80%-hydration dough rested 48 hours, baked fresh to order. Counter-service walk-ins only (no reservations or phone orders under ten focaccias); licensed spritz menu for eat-in under yellow-and-white awnings. Gluten-friendly focaccia available (+$3) but not coeliac-safe due to airborne flour in the small kitchen.
