Shannon Bennett-founded fine-dining institution on level 55 of the Rialto — 360-degree CBD views from what was once the tower's observation deck. Executive chef Hugh Allen steers a single set offering only: the Signature Chef's Tasting Menu, a 14–17 course progression of native-Australian-forward dishes with tableside introductions from the kitchen team. Elenberg Fraser's dark, theatrical dining room seats about 70; sibling Lui Bar shares the floor.

Many years after first experiencing Vue de Monde at Normanby Chambers, dining again at its soaring Rialto Towers home was just as exquisite – a truly memorable fine‑dining journey that the photos capture best.
