About Us

Shannon Bennett-founded fine-dining institution on level 55 of the Rialto — 360-degree CBD views from what was once the tower's observation deck. Executive chef Hugh Allen steers a single set offering only: the Signature Chef's Tasting Menu ($380 per person, June 2026), a 14–17 course progression of native-Australian-forward dishes with tableside introductions from the kitchen team. Elenberg Fraser's dark, theatrical dining room seats about 70; sibling Lui Bar shares the floor. The venue reopened in 2024 after a three-month refurbishment (Time Out, May 2024). Advance-notice vegetarian, vegan, pescatarian and coeliac menus are available; reservations release three months ahead on the 1st of each month at 10am with a 72-hour cancellation policy. Google Maps lists the business as operational (June 2026); Broadsheet and Time Out highlight recurring dishes such as chilled radish broth with fermented koji, avocado tart, Sydney rock oyster with desert lime, and the signature chocolate soufflé with billy tea ice cream.
