About Shimbashi Soba & Sake Bar
Shimbashi Soba & Sake Bar is a specialist Japanese noodle restaurant with three Melbourne locations — Collingwood, Northcote and Carlton North. Owner Takafumi Kumayama brings more than 20 years of soba-making experience from Japan and Singapore, milling organic Tasmanian buckwheat on-site to produce 100% gluten-free soba noodles daily. The menu centres on classic soba preparations served hot in dashi broth or chilled with dipping sauce, alongside bento boxes, rice bowls, and vegetarian and vegan sushi rolls. An extensive sake selection is available, curated to complement the food.
