Serai is chef Ross Magnaye’s modern Filipino restaurant with partners Shane Stafford and Ben Waters, tucked down Racing Club Lane off Little Bourke Street in the Melbourne CBD. A wood-fired grill and open kitchen anchor the room — diners can book the chef’s omakase counter or sit in the bar with natural-leaning wines and calamansi-driven cocktails. The seasonal “Chef’s Feed Me” menu reimagines Pinoy classics with Australian produce (sisig tacos, lechon, kinilaw, claypot rice, duck adobo). Time Out Melbourne named Serai Restaurant of the Year and Best Casual Dining in 2022; The Age Good Food Guide recognised it as best new restaurant; Gordon Ramsay singled out the wood-fired pig’s head sisig tacos.
