Founder Nguyen Trong Thin's signature is beef flash-stir-fried in garlic before it hits the bowl (phở tái lăn / pho bo tai lan), alongside brisket and fatty brisket, red-wine beef stew pho, chicken breast or free-range chicken, tofu-and-vegetable pho, Ngự Bình–style spicy bun bo, and Hanoi spring rolls (official menu, 2026).
