Panda Hot Pot is a large-format premium Chinese hot pot restaurant in Carlton, built around a Wuxia martial-arts theme with elaborate hand-crafted decor, a 1.5-tonne floating dragon suspended from the ceiling, and live Sichuan Opera face-changing performances on weekends and festival nights. Diners choose up to two soup bases — from fiery Sichuan beef-tallow broth to delicate pork bone and mushroom — and cook a selection from more than 100 premium ingredients including multiple wagyu grades, fresh seafood, handmade fish and shrimp pastes, and specialty tofu. The spirit of gathering (聚, Jù) is central to the experience: every dish is designed to be shared at the table.
