Julian Hills’s two-hatted tasting-menu room on quiet Gamon Street in Yarraville — “Navi” means “local” in Cherokee, nodding to his American heritage. About 33 seats (plus chef’s counter) share an intimate charcoal dining room where every plate is set on ceramics Hills throws himself; the set menu spotlights Victorian producers, native ingredients and fine-dining technique (evening degustation $195; Saturday matinee $115, verified May 2026). Dinner runs Wed–Sat with optional matched beverage pairings; Saturday matinee seatings are 1:30–2:30pm for four courses. Next door, Navi Lounge pours creative cocktails and elevated bar snacks for walk-ins (Wed–Fri from 5:30pm, Sat from 2pm).
