Mr Ramen San is owner Roystan Leow's Hakata-style tonkotsu counter inside Midcity Centre on Bourke Street — a compact, izakaya-like room with timber finishes, Japanese film posters and walk-in queues (Broadsheet). Leow trained in Osaka and Kyushu; the signature cloudy broth simmers pork bones with shiitake for about ten hours, pairs with daily-made thin Hakata noodles, braised chashu, seasoned egg, bamboo, wood-ear mushroom and nori, and guests can request a free noodle top-up after finishing the bowl (official site). The menu spans Kyushu tonkotsu, Hokkaido miso beef, teriyaki chashu with spicy tonkotsu, soup-less mazesoba (owner-recommended for broth-averse diners on Broadsheet), strong vegetarian and vegan charsu bowls, seafood ramen, sides such as pork or vegan gyoza, and chilled hiyashi chuka in season.
