Fast-casual Lanzhou lamian counter in the Argus Building block on Elizabeth Street, about two minutes from Melbourne Central: order at the counter or kiosk, choose noodle thickness, and watch dough hand-stretched while bowls are built from broth simmered three to four hours at the brand's Dandenong central kitchen with Victorian Angus conical muscle and up to 18 spices sourced from northern China (Broadsheet, official site). Founded in 2017 by Lu Gan while studying at the University of Melbourne, the chain now spans multiple Australian cities; this CBD shop draws office workers and students for modular soup bases (clear #01 broth, braised beef, pickled cabbage, spicy chilli-oil variants) plus dry youpo wide noodles and cold sesame noodles.
