The official menu centres on pit-smoked grain-fed Angus brisket, burnt ends, pork ribs and smoked chicken, plus buttermilk fried chicken, wings, and a Wagyu cheeseburger; the Southern Pride sharing banquet ($83pp) runs as a chef's set for the full table.
