Thomas Deliopoulos and Sylvia Gabriel's Oakleigh souvlaki shop treats pork and chicken gyros as craft: meats are marinated in-house with oregano, lemon, paprika and salt, spun on the rotisserie, and tucked into springy Greek pita from a local bakery with chips, salad and garlicky housemade tzatziki. Pork is the draw — Deliopoulos comes from a pig-farming family in northern Greece and uses female pigs for a milder profile — though chicken gyros, pork/chicken skewers and the grilled Skepatsi platter (gyros, cheese, green pepper and tomato pressed between two pitas) round out the counter menu. Side salads include an Original Cretan dakos on barley rusks with feta, tomato, olives, capers and olive oil, plus a platter of house dips (tzatziki, kalimera, eggplant, spicy cheese, taramas). Counter service with limited dine-in seating beside the takeaway queue; lunch and dinner seven days. Coverage in Time Out, Neos Kosmos, The Age Good Food and Food Safari helped turn a Chester Street takeaway into a pilgrimage spot for Melbourne Greek street food.
