Hakata Gensuke’s Russell Street shop (opened August 2014) is the brand’s Australian flagship in Melbourne Chinatown — multi-award Hakata tonkotsu built on founder Ramen Master Kousuke Yoshimura’s “Yobimodoshi” master-stock broth, in-house thin noodles, and fast “お待ち” (Omachi) queue service with staff “声だし” (Koedashi) calls. Counter and table seating suit quick CBD lunches and late dinners (daily until 10pm). Core bowls are Signature Tonkotsu, Black Tonkotsu (fried garlic oil and black sesame), adjustable-heat God Fire, and lighter Shio Tonkotsu; sides include Hakata hitokuchi gyoza and house chicken karaage with spiced pepper. Walk-in only; public holidays carry a 15% surcharge per the official store page. Not Healeys Lane, QV chicken ramen, Carlton, or Perth — keep this row on Russell Street tonkotsu only.
