The compact counter-style restaurant at 256 Russell Street focuses on a tight menu of tori paitan soba — a slow-simmered chicken bone broth served with sous-vide chashu — alongside niboshi (dried sardine) ramen and dry mazesoba. The broth recipe and custom-developed noodles are shipped from Japan, and the open kitchen lets diners watch each bowl assembled at the pass.
