About Bossa Nova Sushi

A Bourke Street sushi train from chef Victor Liong (Lee Ho Fook) and restaurateur Con Christopoulos (The European, Siglo), pairing colour-coded conveyor plates with bossa nova on the sound system and a cocktail bar pouring caipirinhas, martinis and half-bottles of Krug. The room centres on a sleek sushi train with stained-glass and textured walls; rotating plates span skipjack tuna nigiri, seared bonito and eggplant agebitashi, while the à la carte list adds kingfish collar shioyaki with ponzu, grilled Wagyu tongue and A5 steak.
