Bincho Boss is a modern Japanese izakaya tucked off Little Bourke Street in Melbourne CBD, cooking over an earthen konro grill fueled by binchotan charcoal. Lunch spans donburi, teishoku sets and premium bentos; evenings shift to izakaya snacks, sashimi, yakitori skewers and charcoal-grilled mains, with Japanese cocktails, sake, beer on tap and a Mon–Sat happy hour (4–6pm). Counter seating overlooks the robata grill in a narrow laneway room inspired by Tokyo yokocho alleys.
