Babines is a modern cocktail bar and French bistro at 108 Smith Street in Collingwood, run by two Frenchmen named Julien who blend their French roots with local Australian produce. The kitchen serves French-inspired bistro food late into the night, including a $45 three-course prix fixe alongside an à la carte menu, with a strong cocktails program to match. Open Wednesday through Sunday from 5pm, it closes as late as 1am on weeknights.
